Join me on Sunday the 20th of October at 2:30 for live butchering demonstration
I will be breaking down an entire Beef Forequarter, that’s everything from the neck back to the 12th rib. You will see where Ribeye steaks, short ribs, and Skirt steaks come from. But the real fun happens in the shoulder, where we discover hidden gems like flat irons and terres major and expose the hidden versatility of a region that is often broad-brushed as simply “tough”.
After the demonstration we will indulge in some Beef Barbacoa, and refreshments.
The Cost to attend the event is $250 per person, and $30 additional to bring a spectator along with you.
Each Full Share ticket will receive:
4 12oz NY Strips
2 1" Bone in Ribeye
2 lbs. Steak Tips
2 lbs. Ground Beef
Plus "something interesting" from the Forequarter. Interesting cuts include, Denver, Terres Major, Delmonico, Flat Iron and more!!
A total Retail Value of $200+
Given the limit of how many “interesting things” there are in forequarter There are only 12 spots available in this class.
